[PM] Create Sprint 1 meeting minutes

Document the first team meeting in a file called meeting_minutes/sprint1_kickoff.md in the repo. Include the date, who attended, what was discussed, what each person committed to delivering by 11 March, and any risks raised. This is your primary evidence for the reflective report — keep it detailed. Every sprint should have its own minutes file going forward.
